Ingredients
This slow cooked springbok curry recipe is a flavorful and hearty dish that requires a variety of ingredients. The main ingredient is 900g (2 lbs) of springbok meat, cut into one-inch cubes. This forms the base of the curry and gives it its distinctive taste. To cook the meat, you’ll need 125ml of vegetable/olive oil or ghee. The recipe also calls for 4 finely chopped onions, 1 small grated carrot, 2 finely chopped green chili peppers, and 3 finely chopped tomatoes. These ingredients add depth and complexity to the flavor of the curry.
To further enhance the taste, our springbok curry recipe includes a mix of spices: 1 tablespoon each of garlic puree, ginger puree, garam masala, and smoked or unsmoked cumin powder, along with 1 teaspoon of chili powder. You can adjust the salt and pepper according to your taste. Finally, garnish the curry with a small bunch of chopped coriander for a fresh and vibrant finish. This combination of ingredients results in a slow-cooked springbok curry that is rich, aromatic, and absolutely delicious.
Cooking and Serving Instructions
Begin your springbok curry recipe by pouring oil or ghee into a large saucepan and heating it over medium-high heat. Next, toss in the onions and fry them, stirring regularly for about 15 minutes until they are nice and soft. Sprinkle in about a teaspoon of salt to help them release more moisture into the pan. Following this, add the chopped tomatoes and the carrot, stirring to combine. Continue frying until the onion, carrot, and tomatoes begin to break down and start looking like a sauce.
At this stage of the springbok curry recipe, add the green chilies and the garlic and ginger purees. You will need to stir the ingredients continuously to prevent them from burning. Now, sprinkle in the garam masala, cumin, and chili powder before adding the cubed springbok. Thereafter, add just enough water to cover the meat and sprinkle in the cracked pepper. Bring the mixture to a boil, then cover and cook over very low heat for about four to five hours until the meat is tender.
To serve, check for seasoning and mix in the chopped coriander. Squirt in the lime juice and serve immediately. Enjoy your slow-cooked springbok curry!
